Ingredients

  • 300g fresh broccoli
  • 100g grated mozzarella cheese (buy already grated mozzarella!) or cheddar
  • 1 egg
  • 35g ground almonds
  • 1 medium sized onion

Side dish

  • 300g mixed salad
  • 40g olive oil
  • 20g apple cider vinegar

Instructions

1. Cook the broccoli until it is soft and then drain it very well. If necessary, use some kitchen paper to dry it. Preheat the oven to 420° F / 220° C circulating air.

2. Chop the onion and the cooked broccoli finely. Put both in a bowl.

3. Add the egg, grated mozzarella and ground almonds and season with salt and pepper. Then mix very well.

4. Line a baking tray with baking paper, put two teaspoons of olive oil on it and spread it with a brush. Form nuggets from the mixture and place them on the baking paper. Bake for about 10 to 15 minutes until they are lightly brown on the outside.

5. Marinate the salad with olive oil and vinegar, salt and pepper. Serve both together.
